Mini Box Turtle Delights Recipe

I’ve never had a pet turtle. I have siblings who have and it’s never ended well. I’ve decided that the closest I’ll ever get to owning a turtle is snacking on these incredibly easy and super delicious Mini Box Turtles, made with Rolo candies and pecans. That’s it! All you need are Rolos and Pecans. I love how Rolo’s make it so easy to enjoy a classic turtle candy without all the mess of caramel making and chocolate melting.

These little turtles need a few minutes in the oven to melt the Rolos. Make sure to keep your pecan head and legs from spreading too much when you press the unmelted Rolos down onto the melted Rolos so that they get coated in the melted chocolate or they won’t stick together well. Press them back in if they spread out at all.

  • 24 Rolo Candies, unwrapped
  • 60 Whole Pecans, intact
  • White Frosting

Mini Box Turtle Delights Recipe

Step 1
Preheat the oven to 200 degrees. Line a baking sheet with a non-stick mat or parchment paper. Place 12 of the unwrapped Rolo candies spaced apart (at least 2 inches) on the lined baking sheet. Sort through the pecans, dividing them into a pile of longer pecans and a pile of shorter/smaller pecans. Place a smaller pecan at the top of each Rolo (this will be the turtle’s head). One each side of the pecan head, place a longer pecan (these will be the turtle’s arms). Cut the remaining pecans in half. Place two pecan halves (cut side facing inward) on the back side of the Rolo (these will be the turtle’s legs). Place the baking sheet in the preheated oven and turn off the heat. Let the pan sit in the oven for 5-10 minutes, or until the Rolo’s look glossy.

Step 2
Remove the baking sheet from the oven. Place another unwrapped Rolo on top of each melty Rolo and press down so that the melty Rolo Spreads into a flat circle and spreads over the edge of each pecan. Let the turtles cool for several hours, or until the chocolate sets and firms up.

Step 3
Place the white frosting in a piping bag fitted with a small round tip. Pipe out little eyes on the head of each pecan turtle.
