Valentine’s Day is right around the corner and naturally my mind is on desserts. These layered brownie trifles are a favorite around our house for several reasons. For one, the recipe is super simple — store-bought brownies, whipped topping, and canned cherry pie filling will do! Of course, you can always make them for scratch if you’re feeling jazzy. Secondly, they’re fun and easy to make with the kids. I had one child spooning whipped cream, one dropping in cherries, and another adding the brownies. Cutest assembly line ever! Lastly, the trifles are served in glass cups so everyone can see each beautiful, delicious layer.  My kids couldn’t stop opening the fridge to stare at the finished treats while waiting for dessert time to roll around!

What You Need

(Makes 8 mini trifles)

  • 1/4 cup light corn syrup
  • 1/4 cup Valentine themed sprinkles
  • 1/2 cup cherry pie filling
  • 1 1/2 cup heavy whipping cream
  • 2 tablespoons sugar
  • 12 brownie bites, cut in half width-wise
    (or a 8×8″ pan of brownies, cut into 1 -1.5″ circles for a total of 12 circles)
  • 8 Maraschino cherries, stems on

How-To

Step 1
Place the corn syrup and sprinkles each in their own separate ramekins. Lightly dip the rims of 8 small glasses into the corn syrup (you want to just lightly coat it, the syrup shouldn’t be dripping) and then dip the syrup coated rims into the sprinkles. Lightly tap any excess sprinkles off of the glasses and set right side up on the counter.

Step 2
Whip the heavy cream and sugar until stiff peaks form. Place a small spoonful of cherries in the bottom of each glass. Add about 1 tablespoon of whipped cream on top of the cherries, followed by a brownie round. Continue to layer the glasses until full. Then add 1 more spoonful of whipped cream and complete it with a cherry on top!

Refrigerate if not serving right away.
