Is there any food out there that brings a group of people together better than a plate of nachos? One huge plate heaping with crackers, melted gooey cheese, shredded meat, sour cream, salsa, jalapeños and cilantro is our idea of the perfect group snack for game day!

We took our nachos up a step by using TRISCUIT Crackers. Better than chips, these crackers hold up to the toppings without breaking or becoming soggy – a must when your nachos are as heavily loaded as ours! The real kicker in these nachos is the Pimiento cheese. Extra creamy cheddar cheese studded with pimientos and broiled to a bubbling golden brown is our idea of perfection.

You can use any toppings you like on your nachos. We thought that pulled pork, jalapeños, sour cream, salsa, sautéed onions, and cilantro made one perfect dish. The only thing that could make it better? A few ice cold bottles of Coca-Cola!

What You Need

Recipe: In It To Win It Touchdown Nachos
  • 1 box TRISCUIT crackers
  • 1 recipe pimiento cheese (see below)
  • 1-1/2 to 2 cups pulled pork, hot
  • 2 to 3 jalapeños, sliced
  • 1 onion, sliced and sautéed
  • Salsa
  • Fresh cilantro, lightly chopped
  • Sour cream

Pimiento Cheese Recipe:

  • 1-1/2 cups mayonaise
  • 1 (4-ounce) jar pimientos, drained
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon grated onion
  • 1/4 teaspoon ground red pepper
  • 16-ounce block cheddar cheese, grated

Step 1
To create the pimiento cheese, grab a large bowl and whisk together the mayo, pimientos, Worcestershire sauce, onion, and red pepper.

Step 2
Stir in the grated cheese. Store any unused portion in the refrigerator, covered, for up to a week.

Step 3
Lightly grease a baking sheet (or line it with parchment paper). Preheat the oven to a medium broil. You can also use an oven-proof platter to place the nachos on, if you wish. Remove the TRISCUIT Crackers from the box and layer them across the baking sheet or oven-proof dish.

Step 4
Spoon the pimento cheese over the crackers in an even layer (don’t cover the crackers around the perimeter of the dish, this is where you will start pulling crackers from to eat the nachos).

Place the baking sheet on the top rack of the oven and broil until the cheese melts and bubbles on top.

Step 5
Remove from the oven and top with the hot shredded Pork, sour cream, jalapenos, salsa, sautéed onion, and cilantro. Serve immediately and enjoy with an ice-cold Coca-Cola!
